The artichoke grows to be about two meters in height with large leaves which curl inwards around the centre eventually opening up to the beautiful flower heads, some growing to be fifteen centimeters in diameter.
The artichoke is a hardy plant which flowers from August to September and then seeds for the next two months. The flower buds on this vegetable can be eaten either cooked or raw along with the stems, but the leaves are best when they are cooked.
